BEER BATTERED BACON WAFFLES


Ingredients


For waffles:

  • 1 1/2 cups whole wheat flour

  • 2 tbsp granulated sugar

  • 2 tsp baking powder

  • 1 1/2 tsp baking soda

  • 1 tsp salt

  • 1 cup Kichessippi 1855

  • 1/2 cup milk

  • 1/4 cup unsalted butter

  • 2 tsp vanilla extract

  • 1 egg

  • 10 slices of cooked bacon, chopped into pieces

For Spicy Beer Caramel Sauce:

  • 1 can of Kichessippi 1855

  • 1 1/2 cups packed brown sugar

  • 1 tsp chili powder

  • 1/2 tsp cayenne pepper

  • 1/4 cup unsalted butter

  • 1 cup cream

  • 1/4 cup maple syrup

  • 2 tbsp corn starch + 2 tbsp water

Instructions

For waffles:

  1. Preheat waffle maker.

  2. Whisk together flour, sugar, baking powder, baking soda and salt.

  3. In a medium sized pot, heat beer, milk, butter and vanilla extract until warm and butter has melted.

  4. Remove from heat and carefully whisk in the egg.

  5. Gently stir in in the wet ingredients to the dry ingredients.

  6. Stir in bacon pieces.

  7. Cook in waffle iron.

For Spicy Beer Caramel Sauce:

  1. In a medium sized pot, bring beer, brown sugar, chili powder and cayenne pepper to a gentle boil.

  2. Simmer for 30 minutes (stirring frequently). The beer and sugar mixture will reduce.

  3. Remove from heat and stir in butter. Add cream and maple syrup.

  4. Put sauce back over high heat, add cornstarch. Stirring until thickened. Remove from heat.
